Bacon Cheddar Potato Poppers Recipe
6 small potatoes
Olive Oil Spray
little bit of Salt
little bit of Pepper
3/4 ounce of Cheddar cheese
2 tablespoons of Sour Cream
1 tablespoon of chives and parsley
Preheat your oven to 425 degrees.
Cut 6 small potatoes in half crosswise and coat the side with olive oil spray.
Spray tops and season with salt and pepper.
Roast until golden brown on underside for about 20 minutes. Remove if tender, flip over and roast about 5 more minutes. (Trim bottoms to prevent rolling)
Top potatoes evenly with your cheese before serving. Bake a couple of minutes until the cheese has melted on the potatoes.
Top with sour cream, and your chives/parsley mixture and then enjoy!
